How It All Began

Two years ago, in the serene Mennonite campos of rural Cuauhtémoc, Chihuahua, James & Berenise launched an artisanal cookie venture, driven by a passion for authentic, high-quality baking.

Drawing from James's British heritage, they set out to introduce truly exceptional homemade cookies to Mexico—crafted exclusively with premium, locally sourced ingredients from the renowned Mennonite communities. We proudly use fresh butter, eggs, and flour from nearby Mennonite farms, celebrated for their dairy excellence and commitment to traditional, wholesome production. Wherever possible, we prepare our own fillings and flavors from raw, natural ingredients to ensure every bite delivers pure, uncompromised taste and freshness.

Meet the Founders

The Cookie Stop Founders

James Thomas Youngs

Co-Founder

James is a British émigré who traded the world of code for the warmth of the oven after relocating to Mexico. Having built a successful career as a software engineer, he chose to leave the tech industry behind to pursue a new passion: artisanal baking.

Berenise Pavon Gonzalez

Co-Founder

Berenise brings over a decade of experience nurturing young minds as a school coordinator to our cookie venture. With her proven skills in organization, team leadership, and attention to detail, she now seamlessly coordinates the production and delivery of hundreds of cookies each week—ensuring every batch is made with care, packed perfectly, and reaches customers fresh and on time.

Our Journey

2023

The Beginning

We started simply by baking small batches of cookies for friends and neighbors—first experimenting with a rich shortbread-style base fused with Mexican cinnamon and vanilla—sharing them casually to spread a bit of homemade joy. The positive feedback was immediate: those first friends became our very first "customers," enthusiastically requesting more and encouraging us to keep going. What began as thoughtful gifts soon grew into the foundation of our little artisanal venture.

2024

Our Public Debut

Our very first public event was the iconic Christmas Lights Parade (Desfile de Luces) in Colonia Manitoba, a beloved holiday tradition in the Mennonite campos near Cuauhtémoc. Amid the festive procession of decorated vehicles, music, and thousands of attendees gathering under the lights, we set up our little stand and sold out completely in a single magical night—serving hundreds of our freshly baked, British-Mexican fusion cookies to the excited crowd of around 10,000 people. The overwhelming enthusiasm and quick sell-out that evening confirmed we were onto something special and gave us the momentum to grow from there

A Cookie in the Oven

Building on the momentum from our debut at the Christmas Lights Parade in Colonia Manitoba—where we sold out to thousands—we opened a small storefront in the area.

We soon realized it wasn’t where our customers were; most orders came from farther away. Then, with the joyful arrival of our baby daughter, Grace Valerie, we paused, reassessed, and shifted to more flexible, customer-focused delivery—bringing fresh cookies directly to people while balancing family and our passion for baking.

Today

We're thrilled to share that we've successfully launched in 25 stores across the region—and we're growing every day!

We're baking and selling more cookies than ever before, while creating dedicated commercial spaces to make our British-Mexican fusion treats more accessible wherever you need them. This expansion also lets us invest in exciting new creations, innovative flavor ideas, and even more ways to bring joy through our handcrafted cookies.

Our Mission

Our mission is to bridge cultures through the art of baking, creating innovative artisanal cookies that fuse the comforting traditions of British baking with the vibrant, bold flavors of Mexico.

Drawing from my British heritage—rich shortbreads, spiced fruit cakes, and classic teatime treats—we blend these timeless techniques with Mexico’s iconic ingredients and tastes: warm cinnamon, deep vanilla, subtle chili heat, bright citrus zests, and other local treasures. This creates unique, harmonious fusions that feel both familiar and exciting.

We are passionate about passing on the love of baking to the next generation, inspiring families and young bakers to explore creativity in the kitchen. Through our small-batch cookies, we share the warmth of our mixed-heritage home with Mexico and beyond—spreading joy, connection, and a little sweetness in every bite.

We bake to unite flavors, honor traditions, and create moments of delight that bring people together.
