This is the cookie that goes on the December table in Chihuahua and gets served with coffee the rest of the year. Anise toasted in-house, rolled in cinnamon sugar straight out of the oven. We bake it in three versions — one recipe with three different fats — so you can choose by your customer and your price point. Sold loose, by the kilo.

The three versions

Vegetable shortening

The most affordable and the longest keeping. No dairy and no animal fat: suitable for a vegetarian diet and for anyone who does not eat pork.

Tradicional

Pork lard

The one people grew up with, with the short, sandy crumb the Chihuahua customer looks for. No dairy.

Butter

The fine version: more aroma and more body. Suitable for a vegetarian diet; contains milk.

Prices per kilo in Mexican pesos. As a food product it is not subject to IVA; your invoice includes IEPS. Minimum order 10 kg, and you can mix the three versions within one order: the combined volume counts in full toward the price band.

Why it sells

This is a product your customer already knows and already asks for. People eat several, not one, so it sells by weight rather than by the piece. It goes with coffee without competing with the dessert menu, it holds up on the counter without refrigeration, and in November and December it sells itself.

Technical sheet

Product: Anise biscocho rolled in cinnamon sugar. Diamond cut, 4.6 cm per side (4.6 × 8 cm point to point), 8 mm thick.
Format: Loose, by the kilo. Sealed 1 kg bag; 10 kg shipping case (10 bags), which you can mix across the three versions. 250 g and 500 g bags on request.
Pieces: 16 g per piece, roughly 62 pieces per kilo.
Ingredients: Wheat flour, the fat of the version, sugar, egg, orange, anise, cinnamon, baking powder and salt. All three versions share everything but the fat.
Shelf life: 3 weeks at ambient temperature in the sealed bag, no refrigeration, in all three versions. Keep somewhere cool and dry, out of the sun. No preservatives: the recipe is low-moisture and the shelf life comes from the formula, not an additive.

Choose version, volume and frequency

With that we fix your price band and reserve production for you.
Receive your order

5 to 7 business days from confirmation. Delivery in Chihuahua and Cuauhtémoc; elsewhere in the country by courier.
Reorder

We give you two weeks’ notice before each peak season so you do not run out in December.

Seasonal production

Biscochos are baked in scheduled runs, not held in stock. In November and December the oven schedule closes early: if you will need product for those weeks, it is worth reserving from October.
